One other thing: A "default value" is just a fancy way of saying what the visitor will get if they don't make a selection. This is the value that shows when your page is first displayed. It's good design to leave the visitor sensical defaults; you will be amazed at the number of people that just click buttons without typing anything. (And you'll notice we practise what we preach; we are not immune from happy clickers. :-)
